A devotee of our guides wrote to us with such enthusiasm about this hotel in a tiny village close to the Gorges du Verdon that we hurried to send our own inspector there, who warmly concurred. Swiss-French Nicolas Stampfli and his Swiss-Italian wife Edith, both ex-teachers, took four years to convert their old mill into an utterly peaceful retreat with simple, colourful bedrooms and delicious Mediterranean set-menu dinners, which are presented with the easy-going grace and good humour that imbues the whole hotel. The restaurant is only open to residents and there is no swimming pool so that guests can enjoy total peace and quiet.
